One stone and a bit…

So I have not disappeared or for that matter ceased to cook, I have just failed to post. I have been cooking and eating lots of lovely things, below is a soup I love to make. Since starting WW I have lost 18lb which is not bad, I am still of course trying to loose more, but will at least try and post a bit more regularly. I am aware that you can never be 100% perfect so I will of course sometimes post recipes that don’t in any way help you loose weight.

Simple Butternut and Sweet Potato Soup (mine made 6 greedy potions)

  • 1 Large Butternut Squash
  • 3 Medium Sweet Potatoes
  • 2 Small Red Onions
  • 2 Medium Carrots
  • Couple of sprigs of fresh thyme or 1Tsp dried thyme
  • Salt and pepper
  • Olive Oil
  • Vegetable stock
  1. So I started with the Butternut Squash, by peeling it (you don’t have to do this, but I feel the need to with supermarket ones), remove the seeds it and then chopping it up into similar sized bits about and inch in diameter. Do exactly the same with the thing with the sweet potatoes.
  2. Put in a roasting dish, season with a good amount of pepper and salt, cover with a light coat of olive oil and stick in the oven until browning. it took me just shy of 40 minutes in a hot oven.
  3. Meanwhile finely chop up the onion and carrot and fry in a large pan until soft add the thyme and fry for further minute. Add the roasted butternut squash and sweet potatoes and then cover with vegetable stock and leave on low heat for 30-40 minutes, you can serve it chunky but I like my soup whizzed up and smooth. Serve. This soup freezes really well and is a great winter warmer.
